A Portland mochi doughnut chain is looking to pull out of one suburb and set up shop in another.
Since its early pandemic pop-up days, Mikiko Mochi Donuts has pursued several expansions throughout the Portland area — some more successful than others. The business initially worked its way into local grocery stores, then in 2022 opened a 650-square-foot cafe at 300 N.E. 28th Ave. Last year, Mikiko launched a second shop in Beaverton.
McGillivray and his wife, co-owner Emily Mikiko Strocher are now gearing up to bring their butter mochi doughnuts to Bethany Village via a smaller-format store the couple has dubbed “Mikiko Jr.” At only 270 square feet, the space differs from existing Mikiko locations — more “designer donut gallery” than traditional bakery, McGillivray said.
