what you’ll need:
– 4 small cucumbers, thinly sliced
– 1 tbsp sugar
– kosher salt
– ⅔ cup gochujang
– ⅓ cup momofuku soy sauce
– 2 tbsp momofuku chili crunch
– 2 tbsp honey
– ½ cup olive oil
– 1½ lbs bone-in, skin-on chicken (breasts or thighs)
– 1 green cabbage, cut into wedges
how to make it:
1. preheat oven to 425Âşf.
2. toss cucumbers with sugar + 1 tsp salt. chill until serving.
3. stir gochujang, soy sauce, chili crunch, honey + olive oil into a sauce.
4. toss half the sauce with cabbage and spread on sheet pan. toss half of the remaining sauce with chicken, then add on top. season with salt.
5. roast 22–25 min (until chicken hits 165ºf), then broil 1–2 min until crisp + charred.
6. finish with reserved sauce + serve with cucumbers.
