Dinner tonight is Mushroom Chicken with Mashed Potatoes and Asparagus. Here’s the recipe for my Mushroom Chicken.
Ingredients:
6-8 chicken skinless chicken thighs
1 tsp of salt, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp paprika and 1/2 tsp chili powder.
3 tbsps avocado oil
2 cups sliced mushrooms
3 cloves of garlic minced
1/2 white onion chopped
1 tbsp butter
1 cup chicken stock
1/2 cup heavy cream
Instructions:
Season chicken with salt, garlic powder, onion powder, paprika and chili powder. Heat avocado oil to medium high in a large pan and add chicken. Cook chicken on both sides for 4-5 minutes on each side for a light sear. Remove chicken from pan and add butter, garlic and onion. Cook for 1 minute and then add mushrooms. Cook for 1 minute and add chicken back, chicken stock and heavy cream. Cook chicken in sauce on low heat for 3-4 minutes until sauce thickens. Serve with mashed potatoes and steamed asparagus.
