Peaches are pretty much on their way out, but blueberries are still kicking. So I tossed them together in a skillet and baked up this cobbler. Golden, bubbly, and obviously topped with a big scoop of vanilla ice cream that melts right into all that fruit. đŤđ

Peach and Blueberry Fillingâ¨4-5 lbs peaches, fresh â¨1 cups blueberries, fresh â¨1/4 cup sugarâ¨3 tbsp lemon juiceâ¨2 tbsp cornstarchâ¨
Cobbler Toppingâ¨1 cup all purpose flourâ¨1/2 cup cornmeal, medium grainâ¨1/4 cup granulated sugarâ¨2 tsp baking powderâ¨8 tbsp butter, cold
3/4 cup buttermilk, milk, or cream

Preheat the oven to 375°F
In a large bowl, toss together the sliced peaches, blueberries, sugar, lemon juice, and cornstarch until the fruit is evenly coated. Pour the mixture into the cast iron skillet.
In a separate bowl, whisk together the flour, cornmeal, sugar, and baking powder.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
