Pesto Pasta Salad | You all loved my Italian Pasta Salad, so I thought I’d share another favorite pasta salad recipe that you can make all summer long. This pesto pasta salad is perfect for backyard barbecues, a quick and easy weeknight meal, or even just snack you can pick on throughout the week.
🌿 Pesto
2 bunches of basil (about 4 cups)
1 cup freshly grated parm
1/2 cup toasted pine nuts
2 large garlic cloves
Salt, to taste
Few ice cubes
🥗 Pasta Salad
1 lb pasta of choice (I used fusilli)
8oz mozzarella, cut into cubes
1/3 to 1/2 cup sun-dried tomatoes
1/3 to 1/2 cup cherry tomatoes, cut in half
Handful of toasted pine bites
Handful of fresh basil, torn
Freshly grated parm
Bring a large pot of salted water to a boil, and cook the pasta according to package instructions.
While the pasta cooks, add all the pesto ingredients (besides the oil) to the base of a food processor. Add a little oil just to prime it.
