🥒 Cucumber & Chickpea Salad | If you’re looking for a healthy weeknight side, then don’t pass on this salad.
5 Persian cucumber
1 can chickpeas, drained and rinsed
1/2 red onion, diced
1/3 cup freshly chopped parsley
1 roasted red pepper, large diced
6 peperoncini, sliced
1/2 fennel bulb, thinly sliced (optional - not videoed)
Feta, as much as your heart desires
Red wine vinegar, to taste
EVOO, to taste
Salt & pepper, to taste
Add all the ingredients to a bowl, season with salt, pepper, red wine vinegar, and EVOO. Mix until fully combined, taste, and adjust seasoning!
