Mango Shrimp & Crab Sushi Bake
Makes 1 (8x8 pan)
1. Mix 3 cups cooked white rice with 3 Tbsp rice vinegar, 1 tsp sugar, 2 tsp sesame oil, and furikake. Spread into a baking dish, sprinkle more furikake, set aside.
2. Combine 8 oz shredded imitation crab, Β½ lb diced shrimp, ΒΎ cup cream cheese, β
cup mayo, 2 Tbsp sriracha, 1 Tbsp soy sauce, Β½ cup chopped green onions, and black pepper.
3. Spread topping over rice, bake at 400Β°F for 15β20 min until golden and bubbly.
4. Drizzle with spicy mayo, eel sauce, and sriracha. Top with diced cucumber and fresh mango, then serve with roasted seaweed and avocado.
