Not all truffle oil is created equal. Cheaper truffle oil is usually just neutral or olive oil with a lab made chemical that mimics one overpowering note of real truffle, making it taste fake and one dimensional. However there are perfumiers that have locked in to make some incredible stuff. The issue is that cheaper truffle oil is sometimes used as a shortcut that masks rather than enhances flavor. Our goal is to make truffle oil with real truffle and see how it holds up. Is there a reason real truffle is almost never used in the truffle oil making process?
