This Potato Au Gratin or Dauphinoise is so simple and indulgent. It makes a delicious side dish and is perfect to make ahead and bring to your next potluck.

Ingredients:
* 2 pounds (about 900 grams) of Yukon Gold potatoes, peeled and thinly sliced
* 2 cups (480 ml) of heavy cream
* 2 cloves of garlic, minced
* 1 cup (100 grams) of shredded Gruyere cheese
* 1 cup (100 grams) of shredded Parmesan cheese
* Salt and pepper to taste
* Fresh thyme leaves (optional, for garnish)
Instructions:
1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
2. In a saucepan, combine the heavy cream and minced garlic. Bring to a simmer, then add the thinly sliced potatoes. Let them cook in the cream for about 5 minutes until slightly softened.
3. Layer 1/3 of the par-cooked potatoes in the baking dish.
4. Season the potatoes with salt and pepper to taste. Sprinkle 1/3 of the shredded Gruyere and Parmesan cheese over the potatoes.
