Hi all! Wanted to share this quick and easy spicy cold noodles recipe using my mom’s cucumber salad recipe, along with some radish kimchi! Now that we’re coming around to the hottest days of the year, cold noodles are a MUST. The good news is, if you’ve got banchan (Korean “side dishes”) in your fridge, you’ve already made 90% of the recipe!
There aren’t really any measurements to this thing—just make a Good Amount Of Noodles (yes, that is a term of art!!), add some cucumber moochim and kkakduggi, along with toasted sesame oil and furikake. You can always sub in chili oil for more heat, plain toasted sesame seeds and torn seaweed, etc. I love “cooking” this way, because despite how easily it all comes together, it always tastes like a MILLION DOLLARS.
