Interrupting this National Holiday for a truly spectacular salad 🧨 I’ve been making this Mediterranean Couscous Salad every week for lunches and I cannot get enough. Including the full recipe below so you have no excuse not to make it!!!

Serves 4-6
GRILLED CHICKEN:
1 1/2 lbs chicken breasts or thighs, pounded to even thickness
3 tablespoons olive oil
Juice from 1 lemon
2 garlic cloves, minced or grated
1 teaspoon harmonyblends Mediterranean or dried oregano
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
FOR THE COUSCOUS SALAD:
1 cup uncooked pearl couscous (about 2 cups cooked)
4 cups romaine lettuce, chopped (about 2 hearts)
1/2 red onion, diced
2 cups cucumber, diced
1 1/2 cups cherry tomatoes, halved
1/4 cup fresh parsley or basil, roughly chopped
3 tablespoons fresh mint, roughly chopped
2/3 cup roasted pistachios
6 oz crumbled feta cheese
