Preheat the oven to 400°F. Pierce the sweet potato with a fork a few times, then cover in olive oil, salt and pepper and bake for 45-50 minutes, or until fork-tender. Once cooked, slice it open and mash the inside slightly with 1 tbsp butter. 2. While the sweet potato is roasting, heat a skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cooked. Stir in the taco seasoning, following the packet instructions (adding water if needed).
