For the dressing:
7 oz carrots
1 shallot OR 4 oz onion
1-2 inches fresh ginger, peeled
1/4 cup soy sauce
1/2 cup rice vinegar
3/4 cup olive oil
For the salad:
Cabbage slaw (I use a Cole slaw mix bag!)
Shredded carrots
Iceberg lettuce
Cucumber, diced
Sugar snap peas, diced
Chicken, shredded
Almonds, chopped
Herb of choice (basil, mint and/or parsley are so good!)
