Saturday breakfast did not disappoint. Hashbrown jalapeno poppers. These were crunchy, spicy, savory, so good! And the best part is that they were super easy to make. Cook 4-5 strips of bacon and chop it up. Add that to 1 block of cream cheese, handful of shredded cheese, 2 diced jalapenos, juice from 1 lime and a few shakes of my taco seasoning. Spoon this mixture over cooked hashbrowns, top with more cheese and continue cooking until nice and melty. Top with more bacon, fresh cilantro and enjoy!
