#ad Mother’s Day is here and I’m grilling up these delicious citrus and balsamic marinated lamb skewers. Made with American Lamb, it helps support local ranchers and farmers and it’s a tasty protein that can be incorporated into any weeknight meal. For the marinade, combine the following: - 2 lbs American Lamb Kabobs - 1⁄2 cup balsamic vinegar - Zest and juice from 1 orange - Zest and juice from 1 lemon - 2 tbsp dijon mustard - 2 tbsp olive oil - 1 tbsp fresh rosemary - 1 tbsp fresh thyme - 1 tbsp bbq seasoning Cube up the lamb into bite size pieces and marinade for an hour in the fridge. When ready, skewer the lamb pieces and pour the marinade into a small sauce pan. Add 1 cup beef stock, bring to a simmer and cook for 10 minutes until it starts to thicken. Place the skewers on the grill over high, direct heat. Flip every 2 minutes and cook until it reaches an internal temperature of 145 degrees.
