Hatch chilies are back! I picked some up at @marianosmarket and made these delicious cheeseburgers. Start by roasting the peppers directly over the coals to char them up. Put them in a plastic bag to steam them and to help remove the skin. Char up some onion slices, dice everything up and mix together. Grill up the patties and top with cheese. Assemble on toasted buns with sriracha mayo, shredded lettuce and top with the hatch chili and onion mixture. These turned out super good.
