#coconutmacaroons are achingly sweet, sticky mounds of semicooked dough that don't taste much like
#coconut. We set out to make something better. To start, our testing had shown us that the choice of sweetened versus unsweetened coconut had a major effect on texture. The unsweetened variety resulted in less sticky, more appealing texture, but it made the cookies just a bit too dry. Looking for a way past this roadblock, we decided to test a combination of sweetened and unsweetened coconut. This worked very well, giving the cookies a more luxurious texture without making them wet or heavy.
