I’m here to remind you that it’s time to make this cake. As soon as I spot the first plums of the season, my mind immediately drifts to Marian Burro’s iconic plum torte. It’s a favorite of mine not only because it’s wonderfully versatile with other fruits, but also because it somehow manages to taste even better the next day.
9” spring form
5-6 plums halved or quartered
1 stick of butter softened
3/4 cup sugar +1 tbsp
2 eggs
1 tsp vanilla extract
1 cup all purpose flour
1 tsp baking powder
Pinch of salt
1/4 tsp nutmeg
1/4 tsp cinnamon
Preheat oven to 350F
In a bowl combine butter and sugar. Add vanilla and eggs. Whisk until a smooth batter. Add flour, salt and baking powder. Combine well and you will end up with a thick butter.
Spread the batter on a greased spring firm pan. Arrange the plums and sprinkle with a mix of sugar and spices. Bake for an hour or until golden brown.
Let it cool before removing the ring from the pan. Enjoy!
