Fill the glass with ice, and add chilled tonic water. Float sage infused Empress 1908 Gin on top of drink. Garnish with more fresh sage. Stir before enjoying! *To make the syrup, combine 1 cup water, 1 cup sugar, and ½ oz fresh lemon juice in a saucepan. Stir over medium heat until the sugar has dissolved.
