We tested this in two of our biscuit recipes, and found that you can substitute chilled bacon fat for butter, but you’ll end up with dense biscuits with notable pork flavor. Unlike bacon fat, butter is 15-20% water which converts to steam in the oven, creating flakier biscuits.
