This shows just 3 of about three dozen or more different brownie variations that I tried, but I think it showcases some of the most interesting findings. Brownies made with cocoa powder generally were more dull in color and in flavor and they just weren’t as fudgy as I personally like them. Also, if you don’t mix the batter really well the brownie tops appear pretty matte, but mixing can help up the shine factor some. Ultimately, after lots of testing, I settled on a super fudgy, very chocolatey version.
