Lobster mushrooms aren’t actually a mushroom species. They’re a regular mushroom (usually Russula or Lactarius) taken over by a parasitic fungus called Hypomyces lactifluorum. That fungus is what gives them the bright red/orange “lobster” color and seafood-like smell. They’re completely edible and considered a choice gourmet mushroom once transformed.
