2 tbsp olive oil
1 cup diced yellow onion (about ½ onion)
1 lb Beyond Beef
1 tbsp Cumin
1 tsp oregano
3 cloves Garlic, minced
¼ tsp fine sea salt
½ cup tomato sauce
Salsa
½ cup diced red onion (¼ onion)
1 cup diced tomato
1 cup diced cucumber
½ cup chopped loosely packed fresh parsley.
½ lemon, juiced
¼ tsp Salt
Yogurt Sauce
¼ cup Greek yogurt (or plant-based sour cream)
2 tbsp olive oil
1 clove Garlic, minced
1.5 tbsp Chopped, fresh Dill
½ lemon, juiced
Pinch of sea salt
To Serve
