For Amy, activism isn’t just on the page—it’s also on the plate. They founded Veggie Mijas (veggiemijas), a women of color collective that centers veganism through the lens of marginalized identities. What began as a small community has now grown into chapters across the country, bringing together vegan folks of color and pushing for more accessible food systems nationwide. 🌱✨
