Last month’s ncprojectbrew event featured the final beer projects of the Brewmaster program’s August 2025 graduating class nctbrewery.
Congrats to Chenghao Xu (superjoey.0203) on taking 1st place and the Project Brew scholarship with his Dino-Mite Fizz 🦖🍺 -a vibrant pink Saison made with hibiscus tea and Niagara College honey, inspired by his grandmother and Chinese tea traditions.
The victory was extra special with his father cheering from the crowd, having travelled all the way from China. Along the way, Xu brewed other “Dino” beers tied to his heritage, earned the Academic Award for the School of Culinary Arts, Wine, Beer & Spirits, and became a leader in student life at NC. Now, with the Project Brew scholarship in hand, he is off to Saskatchewan to study crop science– with dreams of opening his own craft brewery one day.
