mr.tuna_maine first opened in a refurbished hot dog cart that jordan__rubin purchased off of Craigslist. The opening menu was three hand rolls (spicy tuna, spicy salmon, and spicy scallop and crab) and three sushi burritos. It was an immediate hit. Eventually he upgraded to a trailer, and in May 2024, he opened a cheerful and bright brick-and-mortar location with an expanded menu. The food at the standalone incarnation of Mr. Tuna is delightful, impeccable, honest, and full of surprises. The emphasis is on Japanese-inspired sushi: elaborate, overflowing donburi rice bowls, gorgeous sashimi, and over a dozen types of hand rolls. Behind it all is a deep commitment to sustainability, which plays out in dishes like the Skin Nโ€™ Dip, a riff on chips and dip that uses crispy fried salmon skin as the chip (dusted in seaweed powder for that umami punch) with a yuzu mayo as the dipping sauce.
