To emphasize the often-unseen value of women in the cooking world, chef Asma Khan staffed the kitchen at her restaurant @DarjeelingLDN with an all-woman team, many of whom are South Asian immigrants like Asma herself. Today, Darjeeling Express is an acclaimed hotspot, and her latest cookbook, "Monsoon: Delicious Indian Recipes for Every Day and Season," hit shelves this March. Asma couldn't see the representation in cooking that she needed, so she became it — and brought the talents and labor of other women to light alongside her own.
