So satisfying to scrub away that coating. . Then, I thoroughly dried every inch of the pan. Next, I added some canola oil—enough to coat, but not drown, the surface. A paper towel to remove any excess was needed for an even coating. . I turned the stove to medium-high heat and then, the magic happened. The smoke started to dance, and the pan’s color began to transform, turning from a dull gray to a rich, stunning bronze. I repeated the process a few times until I had that perfect, deep patina. .
