Years later, after returning to New York City with her CIA certification, Ettarh became a regular, attuning herself to the rhythms of the menu, then taking a job as a line cook, working her way through the stations in the dining room and the tavern, including the sometimes temperamental wood-fired grill that is the crackling heart of the restaurant.
