Didn’t get the chance to post these before the baby came but now I can officially report these were AMAZING to have on hand especially the first few days coming home from the hospital! It felt so nice to have healthy snacks on hand in between takeout meals. These are a must and not just for breastfeeding moms! They’re perfect for anyone in need of a nutrient packed snack ❤️
Makes about 24 bites
Ingredients:
½ cup freeze-dried strawberries, lightly crushed (optional)
1 ½ cups old-fashioned oats
½ cup flaxseed meal
3 tbsp chia seeds
1/2 tsp kosher salt
1 cup creamy natural peanut butter
⅓ cup honey
3 tablespoons strawberry jam
1 tsp vanilla extract
Instructions:
Crush the freeze-dried strawberries in a bag with a rolling pin or the bottom of a heavy cup so you get small pieces. It should not be crushed so much it turns to powder.
In a large bowl, stir together oats, flaxseed, chia seeds.
