🌮 Happy National Taco Day! We didn’t eat a lot of beef growing up, but when we did, it was usually ground beef because it was the most affordable option. My grandma would make carne molida tacos at least once a week. She’d send me to the store for potatoes, saying “para que rinda,” which meant “to make it stretch.” She’d boil the potatoes, mash them with the beef, and fry corn tortillas until they were perfectly crispy. Then came the best part, stuffing them with picadillo, adding lettuce, tomatoes, cheese, and salsa. Sounds delicious, right? They are, but as a kid, I got tired of them. 😅 I’ll never forget the day I wasn’t allowed to leave the table until I finished three tacos. Once my grandma left the kitchen, I secretly wrapped them in a napkin and buried them deep in the trash. 😂 I’m pretty sure she knew, but decided I’d learned my lesson.
