Ingredients (makes about 40 mini pumpkin cheesecakes): - 1 oz. box Jell-O cheesecake mix - 12 oz. pumpkin puree - 1 cup Baileys - 2 packs of Pillsbury halloween cookies Steps: 1. Preheat oven to 350F 2. Combine cheesecake mix, pumpkin puree, and cold Baileys until pudding texture has formed. 3. Line a mini muffin tray with mini baking cups 4. Firmly press one cookie dough square into each baking cup 5. Once cookie dough base has been added, top with a small scoop of Baileys pumpkin cheesecake filling 6. Place tray in oven and bake for 18-20 minutes. 7. Remove from the oven and allow to cool. Then, serve or let mini cheesecakes chill in the fridge for 10-15 minutes 8.
