A few weeks ago I saw viral zucchini wrap being made and I was so intrigued I knew I had to make it immediately…. and then I made it again and again because it was that good. And so then I saw people making it the same way with thin slices of eggplant and knew I had to try… and yep, it was just as good. Basically you bake 1 layer of thinly sliced eggplant rounds with a melted layer of mozzarella cheese on top. This brilliant concoction makes up the ‘bread’ of the sandwich. I filled this one with a layer of basil pesto, some herbed ricotta, roasted peppers, sautéed grape tomatoes that had burst, arugula, garlic broccoli rabe and balsamic glaze…. Basically whatever you have!
I kept this vegetarian, but you can easily add salami, prosciutto, mortadella or turkey. It’s just so versatile.
