1 pound dry rotini pasta
6 cups chopped antipasto ingredients (I used diced salami, mozzarella, cherry tomatoes, chick peas, olives, artichoke hearts, pepperoncini, roasted red peppers)
1 large handfuls fresh baby spinach
1/2 cup small red onion, chopped
1/3 cup parsley, chopped
1/3 cup grated Parmesan cheese
