Here’s a delicious dinner simple enough for a weeknight meal but fancy enough to serve to guests. I like to serve it over a plate of mashed potatoes, but it’s terrific over rice or couscous or some sautéed spinach. The recipe reminds me of one that I’ve made for a long time now from the Food Network but this one uses honey mustard instead to coat the fish and since I always have hot honey in the House I thought it would be a great use of it. Feel free to use regular honey though.
I also love to make a honey mustard lemon butter to pour over the top of the cooked fish. It’s a terrific way to finish the dish.

Honey Mustard Panko Salmon

Preheat oven to 425F
1 lb of salmon
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
Mix to combine all spices. Set aside
2 heaping tbls Dijon mustard
2 heaping tbls hot honey (regular works just fine)
1/2 cup panko crumbs
1 tbls olive oil
2 tbsp chopped parsley
pinch of salt
