Here is a great easy and delicious meal perfect for ‘Back to Busy’ time! It’s also a perfect thing to meal prep. Since my kids were little I’ve been making taco chicken which is almost embarrassingly easy. Basically you combine chicken breast, taco seasoning, salsa and a little water in the slow cooker and cook it until you can shred it. Once you shred it you can use it many different ways. You can make a container of this, park it in the fridge and let them use it however they want. It is great on pizza, with eggs, on top of mac & cheese, in a taco or quesadilla or on a sandwich. It’s delicious any way you eat it. Today it’s getting wrapped up in a monster burrito along with some cilantro rice, black beans, tomato, avocado and cheese. Wrapped up and crisped in the cast iron and you have a burrito if your dreams
