When we were young we all had our favorite desserts that my Mom used to take great pleasure in making for us. These mini cheesecakes were my brother Tom’s favorite. For all his special occasions growing up and whenever he came home to visit from college, Mom always had a tray of them for him. Mom used to always top hers with Comstock pie filling. She always bought 3 cans and decorated the batch of mini cakes with 1/3 cherry filling, 1/3 pineapple filling and 1/3 blueberry filling. Tom’s favorite topping was always blueberry so these days I still make them for my brother with a homemade super simple blueberry sauce that I included on page 40 of You Got This! because it’s to versatile and good on so many things!
Mom made them in her regular size cupcake tins but I like using my jumbo muffin tins to make them a bit larger… a perfect size mini cake. (The link to the pan I use is in my stories)
