I made a batch of Garlic Scape Pesto from the scapes that were growing in our garden and made a batch of pesto. I used that to make this simple pasta dish. If you can’t find garlic scapes, regular pesto will work just fine. I kept it vegetarian, but you can easily add some cooked chicken or shrimp to pump up the protein. . . No real recipe… just sort of eyeballed everything and combined it all in a bowl and tossed together until all mixed. I got an 8oz pkg of sweet corn, burrata and basil ravioli from traderjoes but really any pasta will work. I sautéed some grape tomatoes until just soft and seasoned with salt and pepper. I cooked the ravioli to al dente and saved 1 cup of pasta cooking water. In a large bowl I combined the cooked ravioli, cooked tomatoes, a handful of sun dried tomatoes, about 1 cup of pesto and some pasta cooking water to thin it out and help make a sauce.
