I saw this recipe for Baked Italian Cod come up on my explorer page and I knew I was destined to make it because I had everything in the House! It comes from vessys_gourmet_kitchen and it was just delicious! (Vesula is one of my all time favorite follows. She’s pretty incredible) I added some canned artichoke hearts and some chopped up yellow squash to mine so it’s a totally versatile recipe, so use whatever veggies you have to the base. Thank you so much Vesela for your wonderful inspiration!
*I served this over rice but it would be terrific over pasta or mashed potatoes as well

12 oz grape tomatoes
1/2 cup Castelvetrano olives
1 red onion, sliced
