I make them in the summer using fresh corn and in the winter using frozen/thawed. They combine so many of my favorite flavors into one tiny savory cake which takes no time at all to assemble and yields big delicious results! Eat on their own with a squeeze of lemon or dunk into a remoulade sauce. These are excellent served with a salad, as an appetizer (make them tiny) or with a fried egg on top. . .
