Need a salad to bring to a picnic this weekend? Here you go! This is one of my favorite things to make for a picnic because it’s easy to make ahead of time (actually gets better as it sits) it’s cost effective and easy to switch up based on what you have. It’s also super easy to make more salad by simply adding a couple more cans of beans. For this salad I combined 5 cans of different beans (literally whatever I had), with some green beans (I used fresh beans that I blanched, but you can use frozen and thawed) , lots of chopped veggies (I chopped up red pepper, red onion, celery and cucumber), fresh herbs (about 3 tbls), 2 tbls of capers and a tangy vinaigrette. Refreshing, light and so delicious, it’s perfect on its own or as a side to any grilled protein. **This salad will keep in an airtight container in the fridge up to 4 days. . . Bean Salad . .
