It has a rich, umami flavor from dried porcini mushrooms that beautifully complements the tender beef. Effortlessly simple every time!

INGREDIENTS
• 4 (6-8 oz) filet mignon steaks, about 2” thick
• ½ oz dried porcini mushrooms
• Kosher salt
• Freshly ground black pepper
• 2 Tbsp unsalted butter
• 2 Tbsp neutral oil, such as grapeseed
• 3-4 sprigs of fresh rosemary
• Flaky sea salt, for serving
INSTRUCTIONS
1️⃣ Make the compound butter. Preheat an oven to 425F. In a small bowl, combine 4 Tbsp softened butter, 2 Tbsp chives, 2 Tbsp chopped rosemary, 1 garlic clove, finely chopped, and ½ tsp Kosher salt.
