🐔 Lazy Weeknight Buffalo Chicken Salad | the easiest, and healthiest chicken salad you’ll make. It’s loaded with protein thanks to the chicken and the Greek yogurt, and it’s perfect for meal prepping.
It’ll last in the fridge for the whole week!
1 rotisserie chicken
1 gallon ziplock bag
3/4 - 1 cup Greek yogurt
1/2 - 3/4 franksredhot hot sauce
2 tbsp chopped parsley
2 tbsp chopped dill
1 celery stalk, finely diced
1/2 small red onion, finely diced
2 tsp garlic powder
2 tsp onion powder
1 tsp smoked paprika
1/2 cup crumbled feta or cheese of choice.
Get a warm rotisserie chicken and place it in a ziplock bag. Remove excess air and massage it until it shreds. Then transfer to a bowl and remove the bones.
Put on some gloves, and toss in the Greek yogurt, hot sauce, onion, celery, herbs, and spices. Mix until the chicken is fully coated, removing any bones that might have gotten left behind.
Taste, and adjust yogurt and hot sauce as needed. Enjoy!
