I am using @alecsicecream grass-fed A2 Pistachio Crunch ice cream, which is packed with kettle-candied pistachios and chocolate flakes, and infused with @getgraza single origin olive oil—there are no words to describe how good this flavor is! Makes 9 sandwiches
18 graham cracker squares
1 cup kataifi (crispy phyllo)
1 tb unsalted butter
2 tb pistachio butter or spread
2 pints @alecsicecream pistachio crunch
3/4 cup chocolate chips
1 tb coconut oil 
Take the ice cream out of the freezer to soften while you do everything else. Line an 8x8 baking dish with parchment paper or saran wrap. Line up 9 graham cracker squares.
