@kalejunkie for EPISODE 2 of meal preppable lunches 👏🏼 this is my CRUNCHY BROCCOLI SALAD WITH HONEY DIJON VINAIGRETTE, a salad that just gets better and better as the days go by because the veggies soften and soak up that delicious dressing! You can also add a protein like tofu or tofu, but I kept this one simple with the bacon and cashews for healthy fats and more crunch. Unlike a traditional broccoli salad that is made with a mayo-based dressing, I opted for a honey vinaigrette to make it lighter for summer and perhaps even lighter on our tummies :) It’s the perfect balance between sweet and savory and I can’t wait for you to make this dish! For meal prep, divide evenly in 4-6 containers, cover and store in the fridge to enjoy for the week.
