Itās got everything youād find on an antipasto platter, but with pasta and a dressing so good youāll want to pour it on your whole life. Ok, maybe that part is an exaggeration, but you get the point. I chose this recipe to be part of the meal prep series because nothing gets soggy and the flavors really soak into the pasta as the days go by. I used chickpea pasta to really load it up with protein, so it actually keeps you fullābut obviously just use what you have on hand.
