episode 3 of meal prep lunches that crush šŸ‘šŸ¼ HIGH-PROTEIN ANTIPASTO PASTA SALAD with creamy shallot vinaigrette! YOU GUYSSSSSSSSS! I think this is my new favorite recipe of 2024. It’s got everything you’d find on an antipasto platter, but with pasta and a dressing so good you’ll want to pour it on your whole life. Ok, maybe that part is an exaggeration, but you get the point. I chose this recipe to be part of the meal prep series because nothing gets soggy and the flavors really soak into the pasta as the days go by. I used chickpea pasta to really load it up with protein, so it actually keeps you full—but obviously just use what you have on hand.
