It is bursting with flavor thanks to the peanut ginger dressing and it’s filled with lots of crunch and textures with all the veggies and the rice noodles! This is a salad you don’t want to miss. Makes 4 servings
For the Salad:
* 8 Ounces Rice Noodles, cooked
* 1 Cup Purple Cabbage finely shredded
* 2 Persian cucumbers, sliced thin
* 1 Red Bell Pepper, sliced
* 1 Bunch Green Onions, finely chopped
* 2 Carrots, sliced thin
* ¼ Cup Cilantro, chopped
* ¼ Cup Peanuts, salted, chopped
* 1 Pound Shrimp, cooked
For the Dressing:
* ½ Cup Creamy Peanut Butter
* 1 lime, juiced
* ¼ Cup Coconut Aminos or 2 tsp fish sauce (that’s what I used today)
* 2 Tablespoons Rice Vinegar
* 2 Tablespoons Ginger freshly grated
* 2 Teaspoons Maple Syrup
