The salmon is cooked using the parchment paper trick that prevents the salmon from sticking to the pan and giving it a nice crisp, and it is then covered in a delicious lemony-garlicy caper sauce that will have you licking the plate clean! INGREDIENTS:
16 oz salmon (2, 8 oz filets or 4, 4oz filets)
Salt & pepper to season salmon
2 tsp olive oil
3 tb unsalted butter
1 large shallot, finely chopped
3 cloves garlic, mashed
3/4 cup chicken or vegetable broth
1/4 cup lemon juice, about one lemon
2 tsp lemon zest (from above lemon)
3 tb capers
2 tb arrowroot or tapioca flour or corn starch (to thicken the sauce)
