This is a tried and true OG recipe that got a little upgrade thanks to using powdered collagen as the protein source and I added chocolate chips and walnuts for a little extra sumthin’ sumthin’. These muffins also happen to be gluten-free, refined sugar free, dairy-free, and you can make them vegan by substituting the eggs for flax eggs or your fav egg substitute. I guarantee that this recipe will be on repeat in your homes. It’s also a great recipe to freeze; just warm a muffin when you are ready to enjoy!
Makes 12 muffins
INGREDIENTS:
3 large, very ripe bananas
2 eggs (or 2 flax eggs)
1/4 cup non-dairy milk (I use almond milk)
2 tb maple syrup
1 1/2 tsp vanilla extract
2 cups gluten free flour of choice (or regular flour!) I used
