@kalejunkie for more! SOFT BATCH GINGERBREAD COOKIES WITH GINGER GLAZE, that taste like they came from a bakery. They have a slight crunch on top and the center is super soft and chewy. This recipe truly is a 12/10!
Makes 16 large cookies or 24 smaller ones
1/2 cup unsalted butter, softened (or vegan butter)
3/4 cup granulated sugar (plus more for rolling)
1 large egg (or sub 1 flax egg for a vegan option)
1/3 cup molasses
2 cups all purpose flour or gluten-free flour
1 tb ground ginger
1 tsp cinnamon
2 tsp baking soda
Pinch sea salt
Ginger Glaze
1 cup powdered sugar
2 tsp ginger
3 tb water
Preheat oven to 350 degrees F. In a stand mixer, add the butter and sugar and mix until for a minute, until fluffy. Next, add the egg and molasses, mixing again until incorporated.
